Take 100g of cashew nuts and soak in boiling water for about an hour. Discard half the water blend the nuts, the juice of half a lemon and drizzle in Olive oil. It should be the consistency of hommus. Season with salt and pepper. Grill skinless chicken strips brushed with oil, sprinkle with chopped herbs. Rosemary or thyme are good. Grill for a few minutes each side warm wholemeal pitta bread and slice open spoon in cashew nut butter, add chicken, some lettuce, chopped cherry tomatoes, and cucumber ribbons. Enjoy.
Serve with Zac's homemade granola bars, A yogurt and a hand full of pitted dates. Zac's granola bars will be posted tomorrow once I have cooked them as all recipes are tried and tested.
